Toasted Cinnamon Bread Pudding

These toasted cinnamon bread pudding muffins do not disappoint. They are sweet but not to sweet, and have the perfect amount of cinnamon. This is a great recipe for large holiday gathering.

*For a small batch use 1/3 of recommended ingredients

Yields: 30

Ingredients:

3 1/4 Cup milk
3 1/2 Cup heavy cream
9 Eggs
10 Egg yolk
2 1/2 Cup brown sugar
1/2 cup cinnamon
1 Tablespoon nutmeg
3 Teaspoon vanilla
5-6 Quarts bread (cut into large cubs)
2 Teaspoons salt

Preparation:

  1. On medium heat, combine milk + cream
  2. Combine all dry ingredients in a medium mixing bowl
  3. Slowly whisk dry ingredients into milk mixture
  4. In a small bowl mix eggs, yolks, and vanilla together
  5. Slowly temper milk mixture into the eggs – strain and let cool for 1-2 hours
  6. Add custard to large dices bread
  7. Pour into individual muffin trays
  8. Top with sugar in the raw
  9. Bake at 325 degrees for 40 minutes covered, then 2-15 minutes uncovered
